Reindeer Biscuits

These are such a hit with the children, I had a little helper when making and decorating these and she created different stories behind each Reindeer which was so lovely to hear. 

You may have guessed already but to make these reindeers all you do is make a ginger bread man and turn him upside down... easy peasy! 

The recipe is below and make sure you and your little one have loads of fun creating your gang of reindeers!

YOU WILL NEED: 

FOR THE BISCUIT:
300 g plain flour 
1 teaspoon bicarbonate of soda 
2 teaspoons ground ginger 
1/2 teaspoon ground cinnamon 
1/2 teaspoon ground nutmeg 
125 g unsalted butter 
100 g soft light brown sugar 
3 tablespoons golden syrup
** Gingerbread man cutter **

FOR THE ICING: 
Icing sugar
Coco powder
Water
Icing pens
White choc. chips & smarties

TO DO: 
1) Preheat the oven to 180C 
2) Get your little one's to add the flour, bicarbonate of soda, ginger, cinnamon & nutmeg into a bowl & mix.
3) Meanwhile use hands need to melt the butter, sugar & golden syrup in a pan over a low heat, string until the sugar dissolves. 
​4) Pour into the bowl of dry ingredients and mix together until it forms a dough. 
5) Roll the dough into a ball & put onto a floured surface
6) Let your little one's roll to around 5mm thick, cutting out the reindeers & carefully putting them on a sheet of baking paper. 
7) Cook for 12 minutes & leave to cool.

To decorate, mix icing sugar, cocopowder & water together to create icing (keep adding until it is thick enough to hold on your spoon).
Turn your gingerbread man upside down and put the icing on to create the face (see photos above).
We used white chocolate chip's for the eyes, smarties for the nose and icing pens for the details. 

If you can manage not to scoff them all, let the icing set to make them extra tasty!

Christmas tree brownies

Since using this recipe for the Easter Brownies I have been dying for an excuse to get back in the kitchen to make these again... because they are a little bit naughty.. but SO YUMMY.. and Christmas seems like the perfect excuse! 

So this time we cut them into bit sized triangle and decorated them as Christmas Trees!!

YOU WILL NEED:

For the brownies
100g unsalted butter
100g plain chocolate
50g plain flour
25g cocoa powder
2 medium eggs
150g golden caster sugar
Chocolate chips

Decoration
Different coloured icing pens
Edible Stars
WHAT TO DO:
1) Preheat the oven to 180C
2) Break the chocolate into small pieces into a heat proof bowl & add butter. Melt in microwave, do short bursts & mix until the chocolate & butter has melted. 
3) Whilst the chocolate melts put the eggs & sugar into a different bowl and mix until it thickens.. this should take about 3 minutes of mixing. 
4) Add the melted chocolate and slowly stir until mixture in combined
5) Sift flour & cocoa powder & stir until mixture is combined
6) Add chocolate chips
7) Line a 20cm square tin with baking paper & pour in mixture
8) Cook for 20minutes. Check it is cooked through.
9) Cut into bite size triangle and decorate!

Easy peasy Christmas pies

With 1 more month until Christmas the LITTLE CHEF'S will be baking some christmas goodies to get us in the mood. Starting with the classic Mince pies… but for those who aren't a fan of the mince, we have also done yummy jam ones too! 

This is such a simple recipe to make with your little one's! They can enjoy mixing, getting messy hands, rolling the dough AND cutting out the shapes!

(This recipe will make 12 pies)

YOU WILL NEED:

175g plain flour
75g cold butter
25g icing sugar
1 medium egg

Mince meat (we used waitrose ready made)
Jams of your choice (We used strawberry & apricot)
Milk or egg for glazing
Icing sugar for dustings 

** Muffin tin with 12 holes, A 3inch circular cutter & a small start cutter**

TO DO:

1) Preheat the oven to 180C and lightly grease a muffin tin with 12 holes 
2) Put the flour, icing sugar and butter into a bowl and rub together to form breadcrumbs
3) Add egg and mix together, using hands to then form a ball of dough
(It really couldn't be simpler to make this yummy pastry!)
4) Put the dough in the fridge for 10 minutes to firm up
5) Roll the firm pastry out until thin
5) Cut out 12 circles (your cutter should be slightly larger than the hole in your muffin tin).
6) Cut out 12 Star shapes
6) Push them into the muffin tins 
7) Fill with a small teaspoon of jam or mince meat
8) Put your star on top of your pie and glaze with either milk or a beaten egg
9) Cook for 15-20 minutes until the pastry is golden 
10) Allow to cool and sprinkle icing sugar on top  


There you have it.. your yummy pies to get you into the Christmas spirit!

Halloween mud cupcakes

This recipe makes 6 small cupcakes but you can easily double it to make more!

YOU WILL NEED: 
40g Butter
40g Self raising flour
1/4 tsp baking powder
25g Golden caster sugar
25g brown sugar
1 egg
1 tablespoon of cocoa powder

For icing:
40g butter
85g icing sugar
50g melted chocolate
Crushed Oreos
Strawberry laces

TO DO:

1) Preheat oven to 180C
2) Cream butter, sugars and coco powder together
3) Add the egg and mix
4) Add the flour and mix well
5) Spoon mixure evenly into 6 small cupcake cases (or double recipe to make 12 small or 6 large) 
6) Cook for 12 minutes and let them cool. 
7) Meanwhile mix the butter, icing sugar and melted chocolate together to make the icing! 
8) Once the cakes are cooled get your little one to decorate them, putting on the icing, sprinkling the crushed oreos & putting in the wiggly worms!

Mud pies (Chocolate cheesecake)

I'm not going to even try and get away with this being even a little bit healthy.. there is nothing healthy about this recipe but I do promise you this is SO DELICIOUS! With chocolate everywhere.. this has definitely been my favourite so far!

Perfect for a halloween treat for your little ones by adding wiggly worms (Strawberry laces).. but this is so good you could even make it for bigger tums to impress your friends at a dinner party!

This recipe is to make 1 large cheesecake in a 20cm cake tin. To make little one's, buy plastic cups and get crafty cutting off the tops to make little pots for little tums, and simply divide the mixture up.

YOU WILL NEED: 

For the base
100g oreo biscuits
50g melted butter

For the filing: 
200g belgian white chocolate 
300ml Double cream
300g Full fat cream cheese
1/2 tsp vanilla extract
100g Milk chocolate

TO DO: 

1) Line your 20cm round cake tin in baking paper (bottom and sides) 

2) To make the base, crush your oreos until there are no large bits(your little one can have lots of fun doing this. We put our oreos in a bowl and used the end of a rolling pin to crush it)
3) Mix in your melted butter
4) Press your butter/ oreo mixture into the bottom of the tin, squashing it down using the back of a spoon. Put this in the fridge whilst you make your filing. 

5) Put double cream, cream cheese & vanilla extract into a large bowl and whisk (You may need to run off to use your electric whisk. The consistency should be thick enough that it holds on a spoon.)
6) Melt white chocolate using a bowl siting over a pan of hot water (the water should have just boiled and now taken off the heat). Don't let it get too hot. 
Once melted let it cool before adding it to your mixture and whisk again until combined. 

7) Spoon a 3rd of the mixture on top of your biscuit base and return it back to the fridge. 

8) Meanwhile melt the milk chocolate. Let this cool and add it to the remaining mixture, leaving a couple of tablespoons of chocolate spare. 
9) Take your cake out of the fridge and add the rest of the mixture, smoothing it down with a back of a spoon. 
10) You can now use your spare melted milk chocolate to pouring over the top, making lines ontop of your cheesecake (this will cool and make a yummy contrast against the soft cheesecake!) 
11) Crush 75g oreos & sprinkle ontop of your cheesecake and return to the fridge for 2 hours. 

** To make it a yummy halloween special you can add worm sweets or strawberry laces to make it look like there are wiggly worms trying to escape!! **

Halloween Pumpkin (orange) cakes!

Prepping for your halloween party and want to make yummy treats for your little one's and their friends? 
This is perfect! It is easy peasy but looks fantastic and your little one can help along the way too!! 

(Ofcourse these can be make just as yummy orange cupcakes during the rest of the year.. they are too delicious to only come out during halloween!)

(This recipe will make 6 small cupcakes, the recipe is good for doubling)

YOU WILL NEED: 
40g Butter
40g Self raising flour
1/4 tsp of baking powder
25g Golden caster sugar
25g Brown sugar
1 egg
1/4 zest of an orange 

Icing:
40g butter

75g icing sugar
1/4 zest of an orange 
Orange food colouring
Block of black icing

TO DO: 

1) Preheat your oven to 180C
2) Add the butter and sugars into the bowl and cream together
3) Add the egg and mix
4) Sift in the flour & add the zest and mix well
6) Spoon mixture evenly into 6 small cupcake tins if you are doing the recipe above. Double to make 12 small cupcakes of 6 large cupcakes. 
7) Cook for 12minutes 
8) Let cool
​9) Meanwhile mix the butter, icing sugar, orange and orange food colouring together until smooth. 
10) Roll of a line of black icing and cut with a knife into small triangles.

11) When your cupcakes are cool, cover your cupcake in the yummy icing, put the triangles on the cake to make eyes and a nose. To make the mouths roll a small sausage using to black icing and put on the cake! 
Voila! You now have your little pumpkin cupcakes!

Gingerbread families

What could be more fun than recreating your family in ginger bread form! In my photos I just did one of the same size as unfortunately my different sized cutters hadn't arrived in time; but for my class with the LITTLE CHEF'S they used different sized cutters, as well as a dog, to create yummy gingerbreads of their families. 

This is a great recipe for little hands as once the dough is made they love to roll it & squish it (just like playdough), and of course after the cookies have been cooked and cooled your little one's can get creative using icing pens, chocolate chips and raisins!

YOU WILL NEED: 

300 g plain flour

Rainbow Cakes

A bog standard cupcake is very hard to resist
but a MULTI COLOURED cupcake is near impossible to resist! 

This is so fun to make; get your little one mixing all the different colours together to make these beautiful and yummy cakes!

YOU WILL NEED:
110g Soft butter
110g caster sugar
2 eggs lightly beaten
1 teaspoon vanilla extract
110g self raising flour
1-2 tablespoon milk

For the buttercream icing
140g soft butter
280g icing sugar
1-2 tablespoon milk
a few drops of food colouring

WHAT TO DO


1) Preheat the oven to 180C
2) Add the butter & sugar into the bowl and mix
3) Add the egg
4) Add the vanilla essence
5) Sift the flour into the bowl and mix well
7) Separate the mixture into different bowls, adding different colouring to each bowl
8) Put spoonfuls of each colour into cupcake cases. One colour ontop of the other
9) Cook for 12 minutes (to test they are cooked put a knife through the cake.. if the knife comes out clean then it is cooked :))


10) Leave to cool 
11) Make icing by mixing all ingredients together
​12) Ice cakes… AND EAT!!

Cheesy numbers

This is a great fun (AND YUMMY) activity to do with Little one's who are interested in counting and numbers..
These Cheesy number's are similar texture to breadsticks & can be kept in a container for 3 days, making them ideal for tasty snacks throughout the week.

This recipe makes 20 numbers

YOU WILL NEED
200g plain flour
½ teaspoon of mustard powder
175g butter, chilled and diced
85g cheddar cheese, finely grated
55g parmesan cheese, finely grated
1 large egg
Sesame seeds to garnish
salt and freshly ground black pepper

WHAT TO DO:
  1. Preheat the oven to 180C
  2. Put the flour, mustard & pepper into a bowl
  3. Add the butter & rub to make breadcrumbs
  4. Add the cheddar & parmesan & mix
  5. Add the egg yolk & mix to form a ball of dough
  6. Flour your surface and turn out the ball, rolling it flat (1/2cm deep)
  7. Use number cutters & put onto baking paper
  8. Brush with the egg white & sprinkle over sesame seeds.
  9. Cook for 10 minutes until golden
  10. Leave to cool

CHOCOLATE COOKIES

You cannot beat home made chocolate chip cookies fresh out of the oven!! YUM!

This is a simple recipe for you to make with your little one's.. it's abit of a naughty treat, but you can make different sizes for Little & Big once and keep them for after dinner goodies!

YOU WILL NEED

125g unsalted butter, softened
100g light brown sugar
2x tablespoon golden syrup
1 teaspoon vanilla essence
160g self-raising flour
150g chocolate (milk, dark or white) broken into chunks

WHAT TO DO: 

1) Preheat the oven to 180°C
2) Add the butter & sugar into a bowl and mix together
3) Add the golden syrup & vanilla essence
4) Mix in the flour & chocolate chunks
5) Take a teaspoon of the mixture, roll it into a ball and put onto baking paper, flattening it slightly with the palm of your hand
6) Cook for 12 minutes. The cookies will still be slightly soft but will harden once cooled

Once cooled.. if there is any left.. your little one's may choose to decorate with icing!​
